Small history
General Information
Black cod is not a true cod, but a member of the Anoplopomatidae family, found only in the north Pacific.
It has a slender body, and of its two dorsal fins, the front one is large. Its back is black or grayish-black and the belly pale gray.
When captured, the black cod weighs 2.5 kg on average and measures about 60 cm.
Main fishing season
Year-round. It is fished in cold deep waters using trawl nets, long lines or traps.
Culinary file
A fatty fish, rich in oil, the black cod's flesh flakes easily. Instead of cooking it like cod, cook it instead like salmon.
