- Buying
- look for firm, very white roots
- with no marks or bruises
- choose small to medium daikon
Storing
daikon can be kept, unwashed, in the refrigerator for 10-15 days
Flavor
slightly sweet root
the flavor of the leaves is somewhat like cardoon or cabbage, though milder
Texture
slightly crunchy
Use
- wash and drain the daikon
- cut off each end; reserve the leaves
- slice into thin rounds; chop the leaves thinly lengthwise
- steam or cook in boiling water
- widely used in stir fries and wok cooking to add an Asian flavor
