* An excellent source of energy, chestnuts are high in starch (40%), calcium, magnesium, potassium, phosphorus, iron and fibre, as well as B and E vitamins.
Smooth shiny shells, without any holes (which may indicate they are wormy) they should feel heavy - if they are too light, it is a sign they are old, as is a soft texture
Keep for several days in a cool place or 2-3 weeks in the vegetable crisper of the refrigerator.
if you wish to freeze chestnuts, make a small incision in each one;
place on a baking sheet and freeze flat before placing them in bags so that they stay separate.
Chestnuts are versatile and adapt equally well to savoury and sweet dishes. They go well with poultry, roast red meats, carrots and Brussels sprouts.
