Apple Fritters

Chef's Note
This recipe can be made with any kind of fruit.

Ingredients
  • 2 + 3 tbsp. powdered sugar
  • 250 g (9 oz.) flour
  • 500 ml (2 cups) lukewarm warm (approx.)
  • 2 tbsp. melted butter
  • A pinch of salt
  • Oil for frying
  • 2 egg whites, beaten to stiff peaks
  • 4 apples, peeled, cored, seeded and sliced in rounds
  • 1 tbsp. Calvados
  • Icing sugar

Method
  1. Combine the flour, salt, 2 tbsp. sugar and the melted butter; gently pour in some warm water to form a fairly runny batter that is not too liquid (like crepe batter); let rest for 2 hours;
  2. sprinkle the apple rounds with the remaining 3 tbsp. sugar; set aside;
  3. beat the egg whites to stiff peaks and fold into the batter just before frying;
  4. dip each apple round into the batter; drop into very hot oil and cook until the fritter is puffed and golden;
  5. remove and place on paper towels to drain; sprinkle with icing sugar and serve hot.
