METHOD
- Place the egg whites and icing sugar in the bowl of an electric mixer and mix for 2 minutes.
- Add the shortening and butter and beat for 20 minutes.
CHEF'S NOTES
You can also make an all-butter icing by using 525 g (1 lb. 2 oz.) butter and omitting the shortening.
To replace the egg whites, you can buy meringue powder in specialty shops. Use 6 Tbsp. combined with 12 Tbsp. water.
The preparation time may seem long, but it's necessary to give the frosting its lightness.
