METHOD
- Sauté the ground beef with the minced onion for a few minutes in a little olive oil in a skillet;
- top with Mexican salsa; mix and heat through;
- fry the tortillas for a few seconds until golden and crisp;
- drain on paper towels; transfer to a plate;
- top with the beef-salsa mixture, a few strips of lettuce and some grated cheese.

In Mexico, a tostada is a small crisp tortilla covered with a topping and served as an hors d'oeuvre.
Chef's tip
The tortilla should be fried in hot oil for a few seconds to become a crispy chip that can be picked up with the fingers. Add the topping at the last minute so the tostada doesn't get soggy.
