METHOD
- brush the cod with butter; roll in bread crumbs and place into a Dutch oven or cocotte;
- preheat the oven to moderate;
- cover the cod with the sliced onions and lemons; sprinkle with chopped parsley;
- season with salt and pepper;
- pour in the white vinegar, or white wine with a little vinegar, to cover the bottom of the pot by 5 mm (1/4");
- place in the oven for 30 minutes and serve in the cooking dish.
