METHOD
- Combine the parsley, basil, shallot, salt and pepper.
- Hull the tomatoes with a paring knife and cut into 4 slices. Place 8 slices on the platter, sprinkle with the herb mixture and cover with the remaining slices.
- Divide the stuffed tomatoes among the raclette pans; cover with raclette cheese and let it melt. Garnish with basil.
