METHOD
- Melt the butter in a large pot and sauté all the vegetables for 3-4 minutes.
Add the maple sugar to caramelize. - Stick the cloves into the top of the ham and lay the ham on top of the vegetables.
- Add the bouquet garni and tomato, then pour on the beer.
- Cook uncovered for 20 minutes in a 190° C (375° F) oven, then cover and cook 45 minutes longer at 160° C (325° F).
Allow to rest before slicing. Serve with the pan juices.

CHEF'S NOTES
The Schoune family, originally from Belgium, arrived in Quebec in 1980. The recipients of numerous prizes, they produce 100% natural beers with no chemical additives. The farm brewery in St. Polycarpe is a model of its type, as is the maple beer that can be obtained on site and in numerous stores throughout Quebec.
Schoune is brewed according to traditional Belgian beer recipes, with water, barley malt and hops. Schoune flavored with maple, developed by Patrice Schoune, has developed a regional accent. It's not hard to understand why he pours some over ham when cooking it. If maple beer isn't available in your area, add a little maple syrup to the recipe.
