cucumber, cut into lengthwise strips

METHOD
- Poach the shrimp in boiling water for a few moments, just long enough for them to change colour; immediately run under cold water to stop the cooking; peel and devein;
- in a bowl, vigorously whisk together the olive oil, lemon juice, parsley and garlic; season with salt and pepper; add the shrimp and combine well with the vinaigrette; marinate for 1 hour;
Presentation
- place a ring in the center of each plate; place a strip of cucumber around the inner perimeter of the ring;
- coarsely tear up the greens and place inside the ring;
- remove the shrimp from the marinade; slice lengthwise and arrange in a wreath on top of the salad greens;
- pour the marinade over top; garnish with the julienned tomatoes and serve cold.
