METHOD
- melt the butter in a skillet; add the bacon bits and fry;
- add the shallots and sweat for a few minutes; add the endives;
- peel and slice the potatoes; cover the endives;
- add a knob of butter; add 500 ml (2 cups) water; season with salt, pepper and nutmeg;
- cook, covered, for 30 minutes.
