METHOD
- To make the burgers, place the ground chicken, breadcrumbs, onion, tikka paste, egg and chopped cilantro into a bowl and mix well. Cover and refrigerate.
- To make the raita, combine the grated cucumber, lemon juice, yogurt and mint in a bowl. Season to taste, cover and refrigerate.
- When you are ready to cook the burgers, take the chicken mixture out of the refrigerator and divide into 8 portions. Form each portion into a burger with your hands.
- Preheat the grill to high and cook the burgers for 10 - 12 minutes, turning halfway through the cooking time.
- Place the naan bread on the grill for the last 2 minutes of cooking time to heat through.
- Serve the burgers with the naan and raita, garnished with a sprig of cilantro.

CHEF'S NOTES
Remember to thoroughly wash work surfaces, cutting boards, utensils and hands after touching raw poultry.
The traditional tikka paste originated in the deserts of Rajasthan. It is rich with aromatic spices, including coriander and ginger. If you can’t find tikka paste, you can substitute curry paste. Or for a completely different version, milder but still delicious, use plain yogurt flavored with ginger.
To seed the cucumber, cut it in half lengthwise and scrape out the seeds with a teaspoon.
If you can’t find ground chicken in your grocery store, use boneless breasts and/or thighs, and chop in the food processor... or replace the ground chicken with ground turkey or lamb if you prefer.
