Hartshorn Salt Hirschhornsalz - known in English as hartshorn, ammonium bicarbonate or carbonate of ammonia. You will find this product called for in many old European and German baking recipes, like gingerbread cookies, biscotti, etc.
Substitute for every 1/2 teaspoon salt of hartshorn: 1/2 teaspoon baking powder and 1/2 teaspoon baking soda.
