Situated in Copenhagen in the vaulted cellar of a XIIth century building, the Kong Hans Kælder, with its medieval atmosphere, has immediate appeal. The minimalist décor is illuminated by a cuisine that some people describe as "bearing the stamp of Matisse or Picasso." Since he took over the restaurant, chef Thomas Andersen has striven to conjure up inventive cuisine, ranking amongst the best in Scandinavia, that is firmly based in French gourmet traditions while drawing inspiration from dishes and products further afield. Taste delicious regional and Scandinavian products paired with exclusive products from the best suppliers in France, Spain and Italy.

At the same time, the trend is towards greater simplicity. In former times a dish could not be elaborate enough: today it must "true to its origins," that is, to the raw ingredients of which it is composed. The simpler the cuisine is, the better the raw materials must be!
