this "garden of the senses" enchants sight, hearing and touch, with food that is a delight to the taste and smell.
The Hotel - An Architecture of the Senses
Jacques and Laurent Pourcel decided to open Le Jardin des Sens in Montpellier, in the heart of their native region, a city they love and which reciprocates their affection.
In 1988 they bought two houses that had been taken over by squatters and created this restaurant in the same way they create their dishes: in the imagination first. "On one hand we wanted a garden, on the other we wanted to celebrate the five senses. So we divided the property into distinct parts: before we built the hotel, which swallowed up part of our original design, there was an orchard, which was the garden of taste, and a garden of aromatic plants which celebrated the sense of smell. There is still a fountain surrounded by flowers which represents the sense of sight; further on there is a patch of vine which represents touch, and an old gnarled olive tree which evokes the sense of hearing when the wind plays in its branches."
The remnants of this theme garden now surround a large dining room, shaped like an amphitheatre, filled with windows and light, as well as a hotel. "It seemed natural that our customers should be able to spend the night after dining here, especially after we received our second Michelin star and more and more people were coming from far away to try our food. We wanted a decidedly modern decor which is peaceful and restful - large rooms done in pleasing colours: sand, pistachio green, cherry red. Everything here harmonizes with our cooking: nothing useless, no pointless embellishments, everything aiming at beauty and at the peace attained by the soul when the senses are satisfied."
