Winter with Pierre Carrier
It is in winter that our caloric requirements are highest, in order to battle the cold and to enjoy the winter sporting activities for which Chamonix is famous!
Nature has arranged things very nicely, so that from seasonal products we can draw warmth and comfort.
Seasonal products
Winter provides a continuous evolution and variety of products. It marks the end of the season for game and Alba truffles, while welcoming the first black truffles (tuber melanosporum) which can still be used to the advantage of pumpkins, kohlrabi and other root vegetables. It's also the beginning of the season for cardoons, which have grown pale sitting wrapped up in the garden.
Pairing any of these products with truffles creates some memorable moments.
From mid-January on, the first green asparagus, grown in greenhouses in the Lubéron region, is cooked first with truffles, then with the earliest morels (beginning of March) and then with the Bianchetto Alba truffle, or March truffle, which takes us all the way through to spring.
