Apple Salad with Dried Fruits, Yogurt and Kiwi
 A recipe created for the Cancer League

Good and healthy!
Fresh seasonal fruits are rich in nutrients and full of flavour. However "fresh" is sometimes relative. It may be several days before produce gets eaten after it is picked, during which time the flavour and vitamin content deteriorate. Therefore, consume fruits and vegetables soon after buying them and avoid storing them in the refrigerator for long periods.
Ingredients for 4 servings
3 tart green apples
4 kiwis
8 dried apricots
3 dried figs
1 tbsp. crushed walnuts
1/2 tbsp. chopped pistachios
2 small containers of plain yogurt
1 tbsp. cream
1 tbsp. granulated sugar
2 tbsp. grenadine syrup
Juice of half a lemon

Method
- Peel the apples and kiwis. Cut the apples into long sticks (batonnets), place them into a shallow dish, toss with lemon juice and set aside in a cool place.
- Slice the kiwis thinly and set aside in a cool place.
- Slice the dried apricots and figs.
- Combine the apples with the dried fruits; add the yogurt, cream and sugar and combine gently.
- Arrange the apple salad in the centre of each plate and place the kiwi slices in a wreath all around the salad.
- Drizzle with a little grenadine. Serve very cold.
