Apple Pie - Omenapiirakka

Ingredients

    Dough:
    • 125 gr butter or margarine (room temperature)
    • 150 ml sugar
    • 1 egg (room temperature)
    • 250 ml flour
    • 1 tsp baking powder
    • 1 tsp vanilla sugar

    Filling:

    • 250 g quark (maitorahka)
    • 200 ml sour cream
    • 100 ml sugar
    • 2 eggs
    • 1 tsp vanilla sugar
    • 1 tsp cinnamon
    • 5 – 6 apples

Preparing the dough

  1. Beat the butter together with the sugar until light. Add the egg.
  2. Mix together the flour, baking powder and vanilla sugar, and stir into the dough.
  3. Line the bottom and edges of a large, greased pie tin with the dough. Place the pie tin in the fridge to cool.

Making the pie

  1. Peel, core and slice the apples. Place the apples into the pastry-lined pie tin. Sprinkle with sugar.
  2. Mix together the quark, sour cream, eggs, vanilla sugar and cinnamon and pour over the apples.
  3. Bake the pie at 200° C (400°F) for approximately 30 minutes.
