Apple-Flamed Prawns

An original recipe from Michel Bruneau of La Bourride Restaurant in Caen, France

Ingredients for 4 servings
  • 12 to 16 prawns (shrimp), depending on size
  • 130 g (1/2 cup) half-salted butter
  • 1 tbsp. olive oil
  • 8 sprigs of fresh thyme
  • Salt and freshly ground pepper
  • 1 bunch of parsley
  • 100 ml (6 tbsp.) Calvados

Method
  1. Season the prawns with salt and pepper. In a large skillet, melt half the butter in the olive oil; heat; add the prawns and cook for 6-8 minutes.
  2. Pour in the Calvados; add the thyme and flambé.
  3. Add the remaining butter and continue to cook for 3-4 minutes.
  4. Garnish with parsley and serve immediately.
