Recipe from Master Chef

Description

A fish of the gurnard family

The body is long, thicker at the front and tapering towards the tail, marked with thin vertical stripes. Measuring about 40 cm long, this fish is found in coastal waters at a depth of 10 metres in the summer and 100 metres in the winter. It prefers to live near the sandy bottoms from which it takes its colouring. Its white flesh is highly prized.
