Ingredients
  • Sweet pastry crust for 1 large tart
  • 300 g (10 oz.) diced apple
  • 20 g (4 tsp.) butter
  • 150 g (5 oz.) sugar
  • 20 g (2 1/2 tbsp.) cornstarch
  • 35 ml (2 tbsp.) water
  • 75 g (2 1/2 oz.) cranberries, red currants or blueberries
  • Cinnamon to taste
  • 25 g (1 oz.) almond paste
  • 4 apples, peeled and cut into thin strips

Method
  1. Melt the butter and sauté the diced apple; add the sugar and cook 2 minutes. Combine the cornstarch with the cold water and add to the apple mixture to thicken, stir for 30 seconds over the heat and then remove. Add the berries.
  2. Spread the almond paste into the bottom of the tart shell; place the apple and berry mixture on top.
  3. Place all of the julienned apple over the top of the tart, being careful not to exceed the edges of the pastry.
  4. Bake in a 190° C (375° F) oven for 20 to 30 minutes or until the centre of the tart is done.
