Grilled Apple Relish

This tasty relish is a perfect accompaniment to grilled pork dishes as well as freshwater fish. It also makes a colorful and festive addition to a holiday buffet table.

Ingredients

  • 12 Golden Delicious apples, cored
  • 2 medium red onions, quartered
  • 2 tbsp. chopped fresh chives
  • 2 tbsp. chopped fresh parsley
  • 60 ml (1/4 cup) vegetable or canola oil
  • 1 tsp. cinnamon
  • 1/2 tsp. mace
  • 1/2 tsp. allspice
  • 60 ml (1/4 cup) rice wine vinegar
  • 60 ml (1/4 cup) extra-virgin olive oil
  • 3 tbsp. chopped cilantro
  • Salt and pepper

Method

  1. Combine the first 9 ingredients and toss well.
  2. Cook the apples and onions over a gas or charcoal grill. Do not overcook. The apples should be semi-firm, not mushy, and retain their texture.
  3. Cool the mixture, then chop the apples and onion into small dice.
  4. Blend in the olive oil and cilantro. Season with salt and pepper to taste.
