 | Grilled Apple Relish

This tasty relish is a perfect accompaniment to grilled pork dishes as well as freshwater fish. It also makes a colorful and festive addition to a holiday buffet table.
Ingredients
- 12 Golden Delicious apples, cored
- 2 medium red onions, quartered
- 2 tbsp. chopped fresh chives
- 2 tbsp. chopped fresh parsley
- 60 ml (1/4 cup) vegetable or canola oil
- 1 tsp. cinnamon
- 1/2 tsp. mace
- 1/2 tsp. allspice
- 60 ml (1/4 cup) rice wine vinegar
- 60 ml (1/4 cup) extra-virgin olive oil
- 3 tbsp. chopped cilantro
- Salt and pepper
Method
- Combine the first 9 ingredients and toss well.
- Cook the apples and onions over a gas or charcoal grill. Do not overcook. The apples should be semi-firm, not mushy, and retain their texture.
- Cool the mixture, then chop the apples and onion into small dice.
- Blend in the olive oil and cilantro. Season with salt and pepper to taste.
