The most famous of this family is Double Gloucester, originally roughly twice the size of Single Gloucester, but made slightly differently. They both originated near the town of Gloucester on the western edge of the Cotswold Hills. In an ancient tradition practiced until fairly recently, Gloucester cheeses were rolled down the hill to celebrate the arrival of spring and in olden times were transported to London on barges. A close cousin of cheddar, with a lovely silky texture, golden colour and deep mellow flavour, Gloucester is one of the most loved of English cheeses.
