Another cheese from the midlands of England, Derby is the firmest white cheese apart from cheddar. It lasts well and is best eaten at six months of age when, if properly made, it takes on a honey hue, while retaining its mild flavour.

Sage Derby
It is made by adding finely chopped sage leaves to the curd.
