A relative youngster in the world of English cheese, Caerphilly has been made only since about 1800. It is a young cheese, flaky and moist and with a buttermilk-like flavour. It was traditionally a very popular food in the lunch boxes of Welsh miners because of its easy digestibility. With its non-cloying taste it leaves the palate fresh and clean.
