All about EDAM

Sommelier's suggestion
Young - a light fruity red such as Beaujolais, Chinon, Bourgueil or a pale beer
Aged - Côte-du-Rhône, Bordeau, Bourgogne, or a strong, dark beer

Origin: a pressed, uncooked cheese from the Netherlands

This perfectly round, red-waxed cheese is world-famous. The Edam cheese is made from semi-skimmed milk and has a lower fat content than the Gouda. It has a mild taste and a smooth texture. It is said that the unique flavor comes from the grazing pastures in North Holland.

It is named after Edam Edam (mun. Edam-Volendam), a town in the province of North Holland, some 15 km northeast of Amsterdam.
